Umeboshi is a dried and pickled fruit that resembles a plum but is actually a closer relative to the apricot. This salted and picked fruit is salty and sour at the same time. It is often used to eat with rice, noodles, rice balls (onigiri) and also can be used with alcohol as a flavor enhancer. Many people in Japan eat umeboshi as a cold remedy and has become a staple for many families in Japan.
Our ume paste is made from "Nanko-Ume" from the Kishu area of Japan which is known for their high quality plums. Largely harvested in the Wakayama Prefecture of Japan, these Nanko Umes are famous for their quality, their taste and their history. Wakayama Prefecture produces about 60% of Japan's plum yield and has a history of over 60 years.
